This is a great go to lunch recipe.  It can be made a day ahead of time and stores well in the fridge. I am not a huge mayonnaise fan so I use almond butter instead.  Be sure to read labels as many almond butters have added sugar.  The Whole Foods brand chunky almond butter is my favorite.   I like to eat my chicken salad straight out of the bowl as shown above but you can aslo add it to bib lettuce for a lettuce wrap or you can add it to gluten free bread.

 

Paleo Chicken Salad

1  chicken breast (cooked,chilled and diced)

1 apple diced (I prefer honey crisp apples)

2 strawberries (diced)

1/2 tsp red onion (diced)

3 T almond butter (be sure to read labels)

Mix everything together and enjoy!
