Have you ever had tried grilled pineapple? If not, try this recipe!! It is so good! Tonight we grilled chicken and pineapple kebabs with grilled veggies and a baked sweet potato sprinkled with cinnamon for dinner. I marinated the chicken in one of my favorite marinates: lime juice and olive oil. It’s that simple, but it adds a lot of flavor to the chicken and keeps it moist. This marinate is also good if you add honey( I did not to make the recipe whole 30 compliant).
I used two tools for this dinner that I recommend. The first is this pineapple corer from pampered chef. It makes prep time a breeze. The other is a vegetable grilling basking. I found mine at Home Depot but here is one from Amazon. Vegetables such as zucchini, squash, onions, and peppers work very well on the grill.
Honey grilled chicken and pineapple kebabs
3 chicken breasts
3 limes, juice of
2 T olive oil
1/4 cup honey (optional-do not use if you are doing Whole 30)
course sea salt and pepper, to taste
1/2 sweet onion, cut into large chunks
1/2 fresh pineapple, cut into large chunks
2 T cinnamon
1. Add chicken, lime, olive and honey into a covered dish and marinate for at least 8 hours
2. Heat grill to medium heat
3. Cut chicken into large chunks and sprinkle with salt and pepper
4. Sprinkle pineapple with cinnamon
5. Thread chicken, onion and pineapple onto metal skewer. I place the onions next to the chicken only (not the pineapple) to add a little flavor
6. Grill over medium heat 16 minutes or until done, turning once
Grilled Squash, Zucchini, and Onion
2 zucchinis
2 yellow sqaushes
1/2 sweet onion
Course sea salt and pepper, to taste
2 T olive oil
1 tsp oregano
1. Cut all of the veggies into large chunks
2. Add to bowl and drizzle with 2 T olive oil, salt, pepper, and oregano
3. Grill over medium heat in vegetable grilling basket 20 minutes or until done
