These Spinach turkey burgers with bacon are my favorite burger! They are super simple to make and a great way to get your kids to eat spinach.  I always make extra so I  can reheat them for breakfast. It’s always nice to get a little break from eggs.  You can serve these on a gluten free bun but I prefer to just eat them without a bun. Make sure to read labels when you buy your bacon.  You want an uncured, sugar free, and nitrate free brand.  You can also omit the bacon for an even quicker weeknight dinner.

Spinach and Bacon Turkey Burgers

2 lbs turkey, around 7% fat

5oz package of baby spinach, chopped

6 slices of uncured sugar free bacon, cooked and chopped (optional)

5 scallions, diced

2 garlic cloves, minced

1 tsp cumin

 

1. Cook bacon and chop once cooled

2. In a large bowl, combined chopped spinach, scallions, garlic, and cumin and stir together

3. Next, add in turkey and mix with hands

4. Use a 1/3 measuring cup to measure out meat and form into patties (You can adjust this based on size of burger you prefer)

5. Cook on grill over medium heat approximately 7 minutes on each side or until done

Enjoy with or without a bun!!!
