This  side dish is so good! The coconut oil really goes well with root vegetables.  I used butternut squash and parsnips tonight but you can pick and chose your favorite root vegetables. Coconut oil  is one the best oils to cook with.  It is made of of medium chain triglycerides (MCTs) that have been shown to lower cholesterol and blood pressure and improve brain function and metabolism. Coconut oil, unlike most other oils, is highly resistant to oxidation at higher temperatures. When oil is oxidized is releases harmful free radicals. Chose a coconut oil that is organic, expeller cold-pressed, and unrefined. Right now I have the whole foods brand in my pantry but have also used Nutiva in the past.

Coconut Oil Roasted Root Vegetables

Variety of root vegetables(parsnips, butternut squash, sweet potatoes, turnips, beets,etc.)

1 T of melted coconut oil

Course salt and Pepper

 

1. Peel and cut your favorite root vegetables into equal size pieces and coat with oil, salt and pepper

2. Spread out evenly on a baking tray

3. Cook at 400 degrees for 30 min, or until done
