I was was craving guacamole the other day so I came up with this recipe. If you have any of the salsa left over, you can mash it up with a fork and use it as dip with fresh veggies (carrots, zucchini slices, cucumber slices, etc). I buy my salmon frozen from Whole Foods. You need to be sure to read labels when buying salmon to ensure you buy wild caught and not farm raised salmon. Salmon is a loaded with healthy omega-3 fats and because it has a meatier texture it can easily be grilled. Salmon with Guacamole Salsa

4 salmon fillets

5 limes, juice of

2 T olive oil

Course sea salt and pepper

2 avocados, peeled and chopped

1/2 jalapeno, seeded and minced

1 garlic clove, ,minced

1 T red onion, diced

7 grape tomatoes, chopped

 

1. Marinate salmon fillets in olive oil and juice of 3 limes for 30 min

2. Add Salt and Pepper and Grill over medium heat for 10 minute or until done,flipping once

3. While salmon cooks add juice of 2 limes and remaining ingredients in bowl and mix

4.  Topped cooked salmon with the Guacamole salsa
