I recently purchased a Spiralizer and I am in love with it. I came up with this recipe as an alternative to pasta salad for summer barbecues. It is a nice and healthy side dish that travles well.  You  can also add chicken like I did  and turn it into a main course meal.   It is is even better the next day so leftovers can used for lunch.

Rainbow Zoodle  Salad with Lemon V inaigrette

3-4 zucchinis

1 red pepper, chopped

1 yellow pepper. chopped

2 cups of baby spinach and/or baby kale, chopped

1 pint of grape tomatoes, halved

1/4 cup red onion, diced

grilled chicken, chopped (optional)

1/4 cup fresh lemon juice

zest of one lemon

1 garlic clove, minced

1/4 cup olive oil (I used lemon olive oil)

1 tsp Dijon mustard (be sure to read labels)

salt and pepper, to taste

1. Use the Spiralizer on the zucchini and place in a large bowl

2 Add in the peppers, spinach/kale, grapes tomatoes, onions and grilled chicken. Mix

3. In a separate bowl whisk together lemon juice, zest, garlic and Dijon mustard.

4. Pour over zoodle salad and mix
