This egg salad is so simple and easy and makes an excellent breakfast or lunch. The recipe can easily be doubled or tripled. Make sure to read the bacon labels to find one without any added nitrates or sugar.

paleo egg salad 

1-2 hard boiled eggs, diced

1/2 avocado, diced

1 slice of cooked bacon, chopped

1. Add all the ingredients to a bowl and slightly mash with fork.
