My husband was not home for dinner tonight so I made my kids homemade chicken tenders coated with almond flour and unsweetened coconut flakes.  Click here for the recipe.

I took a few strips for myself to make a salad.  My kids had the same dinner I just served the pineapple, avocado, chicken and mixed greens all separate on their plate rather than as a big salad

I love fresh pineapple! This pineapple corer and slicer from pampered chef makes prep time a breeze. No, I don’t work for pampered chef. I just really love this pineapple slicer.  It is one of my favorite kitchen gadgets.  I love to grill pineapple.  The heat from the grill brings out the sugars in the pineapple and creates a completely different taste.  It was raining outside tonight so I used my griddle indoors.  It was still good but not as good as cooking it outside on a  gas grill.

Grilled Pineapple Salad  (1 serving size)

1/4 of a fresh pineapple, cut into 1/2 in slices

1/2 avocado

1/4 cup grape tomatoes, chopped

1 T red onion, chopped

Chicken, sliced (I used paleo chicken tenders found here but you can also use grilled chicken)

2 cups of mixed green salad

Dark Balsamic vinegar

Basil olive oil

1.  Heat indoor grill pan or outdoor grill to medium heat. Add pineapple and grill 3-4 minutes on each side

2. Add grilled pineapple and remaining ingredients through chicken to a bed of mixed green

3. drizzle with olive oil and vinegar
