This recipe is very simple and a healthy alternative to deep fried fast food chicken tenders or frozen ones you bake in the oven. My kids love these and I like adding them to salads. You can also cut the chicken into chunks if you want to make chicken nuggets for them. This recipe can either be baked in the oven or if you prefer a crispier chicken tender, you can heat up a little bit of coconut oil in a pan and brown both sides for a few minutes. Then transfer the chicken tenders to a baking dish and finish cooking.
Paleo Chicken Tenders
2 chicken breast, pounded flat and cut into long strips
1 egg white
1/2 cup almond flour
1/2 cup unsweetened coconut flakes
1/2 tsp salt
1/2 tsp pepper
drizzle of macadamia nut oil (optional)
1. Add egg white to shallow dish and whisk with fork
2. In a seperate shallow dish mix together almond flour, unsweetened coconut flakes, salt and pepper.
3. Dredge chicken in egg white then coat in flour and coconut mixture and transfer to a baking tray
4. There are 2 options to bake these:
- Option 1:Place coated chicken strips on a non stick cooking tray and drizzle with macadamia nut oil. Bake at 375 for 18-20 minutes. Then turn on broiler on low for a few minutes so tops get browned. Be sure to watch them as they will burn easily!
- Option 2: Heat 1 tsp of coconut oil in a large frying pan over medium high heat. Add chicken tenders and brown each side for 2-3 minutes per side. Transfer tenders to a baking dish and finish cooking at 375 for 15 minutes or until done.
