I went to Whole Foods yesterday and stocked up some items that made this meal prep very easy and quick. I really like the organic frozen vegetables they sell.  It is a great way to save some money as they are relativel  cheap.  I like to use them in eggs for breakfast or different types of stir fry.   Tonight I used 1/2 of package of the organic 3 pepper blend.  I added the veggies, still frozen, to a skillet along with grass fed beef and 1/2 a chopped onion and cooked them all together. This adds great flavor to the beef.

Before I added any spices I took a few paper towels and soaked up some of the excess fat from pan.  Then added taco seasoning spices and cooked for a few more minutes.

I added the meat minute to a bed of chopped romaine lettuce and added some fresh pico de gallo that I got at Whole foods.  I made sure to read the ingredients to make sure everything was Whole 30 compliant.  I also added in some chopped tomatoes and sliced avocados.  I normally make my own dressing but I always see people posting about Tessemae’s all natural salad dressing so I decided to try some.  I bought the Southwest Ranch flavor to try tonight and it was very good!

Easy Taco Salad

1 lb grass fed organic beef

1/2 to 1 16oz. package of frozen organic peppers blend (red, yellow and green) (can also chop fresh peppers instead)

1/2 of a large onion, chopped

1 tsp garlic

1.5 tsp chili powder

1 tsp cumin

1/2 tsp oregano

1/2 tsp salt

Romaine lettuce, thinly sliced

Pico de gallo ( I used fresh pre-made from Whole Foods but you can make your own)

Avocado, sliced

Tomato, chopped

Tessemae’s All Natural Southwest Ranch Dressing

1. Add frozen peppers, chopped onion and beef to skillet and cook until done. Break beef into smaller pieces as it cooks.

2. Drain off excess fat

3. Add seasonings to pan and stir and cook on low for an additional 3-4 minutes.

4. Add meat mixture to chopped romaine lettuce

5. Top with desired amount of tomatoes, pico de gallo and avocado.  ( I used 1/2 an avocado, 1/2 cup chopped tomatoes and 1 T of dressing in my salad)
