This is a quick and easy side (it only has 3 ingredients!)  if you have a Trader Joe’s near you.  I buy the pre-cut butternut squash and steamed baby beets from them.  If you don’t have a Trader Joe’s a lot of grocery stores also sell these items.  You can also buy a whole butternut squash, peel and cut it into 1 inch cubes. Tonight I served this side dish with turkey burgers, fresh fruit and a tomato and cucumber salad.  (Farm fresh tomatoes, cucumbers, basil, olive oil, balsamic vinegar, salt and pepper.)

Roasted Butternut Squash with Beets and Walnuts

1 package of pre-cut butternut squash or 1 whole butternut squash peeled and cut into 1 in cubes

3 baby beets, thinly sliced

1/4 cup walnuts, toasted

2 T olive oil

coarse salt and pepper, to taste

1. Arrange squash in a single layer on a tray and coat in olive oil, salt and pepper. Bake at 400 for 25 min.

2. During the last 5 min of baking, added the walnuts to toast them.

3. combine sliced beets, cooked butternut sqush and walnuts in a large bowl and mix.
