This Greek marinade  is great for chicken and veggies but can also be used as a salad dressing.  When I made this dinner, I used half the marinate for the chicken and saved the other half for the veggies. I highly recommend a grilling basket like the one pictured below.  I used mine all the time.  Here is a similar one from amazon.

To make the grilled veggies, I placed half  the marinade is a big bowl and added  in veggies that were cut into large chunks and tossed to mix. Tonight I used zucchini, yellow squash, eggplant, sweet onion and tomatoes.   Any kind of pepper or  asparagus would also be a nice addition to the mix.   Then I grill for about 8-9 minutes on my grill. I like my veggies with a little bit of bite left to them.  You want to make sure you don’t overcook them.  During the last 2 minutes of cooking, I added some thickly sliced tomatoes to the grill basket.  Then I transferred all the cooked veggies back to the original bowl I used, as shown below.  This picks up the residual Greek marinade and adds a lot of flavor.

Tonight I served this dinner with a fresh fruit salad but a nice greek salad or this tomato and cucumber salad would also go very well with it. I have the pinterest link for the tomato and cucumber salad below.  If you can tolerate rice, the veggies over rice with a little bit extra of the marinade added would also be amazing.

Greek Chicken and Veggies

1/4 cup olive oil

2 lemons, juice of

3 T red wine vinegar

3 garlic cloves, minced

1 T dried oregano

1 tsp coarse sea salt

1/2 tsp fresh ground pepper

3 chicken breasts

your choice of veggies cut into large chucks (zucchini, summer squash, egg plant, tomatoes, onions, asparagus, green peppers, red peppers)

 

 

1. Combine all the ingredients.  Add 1/2 to a large Ziploc bag and 3 chicken breasts (if you want to make more chicken, double the recipe)

2. Place other 1/2 of marinade in a container and store in fridge

3. Marinate chicken in fridge for 6-8 hours

4. After 6-8 hours, remove chicken from marinate and sprinkle with additional salt and pepper to taste.

5. Add cut up veggies and remaining 1/2 of marinade to large bowl and toss

6. Place chicken on grill and cook 8 min per side over medium heat or until done

6. When you flip the chicken, add the veggies to the grill using a grill basket and cook for 8 minutes, stirring occasionally (if you are using tomatoes, wait and add those the last few minutes)
