Tonight for dinner I made salmon on the grill and topped it with a strawberry and avocado salsa. This salsa would also be good with chicken if you aren’t a big salmon fan. I’ve been buying my wild caught salmon frozen at Whole Foods since my local grocery store doesn’t carry wild salmon.
I also made a big mixed green salad with lots of veggies- Red bell peppers, tomatoes, raw zucchini, carrots, red onions, and cucumber. I used Tessemae’s all natural Zesty Ranch dressing.
Grilled Salmon with Strawberry and Avocado Salsa
2 salmon fillets
Course Sea
Pepper
1 1/2 cup strawberries, diced
1/2 avocado, diced
1 T red onion, diced
1 T cilantro, chopped
1 lime, juice of
1. Sprinkle salmon with salt and pepper and grill over medium heat 5-6 min per side, or until fish flakes with fork
2. Combine remaining ingredients in bowl
3. Top cooked salmon with strawberry salsa
