I love grilling fresh fruit during the summer. The heat from the grill brings out the natural sugars in the fruit and caramelizes them. Pineapple and peaches are my personal favorite grilled fruits but watermelon, apricots, apples, figs, bananas and plantains are also good. For tonight’s dinner, I added chicken, red peppers, onions and peaches to my kabobs. This recipe would also work well with beef or pork. Continue reading

My husband’s birthday was this week and he requested steaks for dinner. Since I was going to be using our grill for the steaks, I decided to try this recipe for grilled vegetables I found on foodnetwork.com. The veggies turned out great! I grilled zuchinni, yellow squash, red pepper and eggplant. The oil and balsamic dressing gave them a lot of flavor and putting them directly on the grill resulted in a really pretty presentation. I needed a break from eggs every single morning for breakfast so I decided to buy some prepackaged chicken and apple sausage. It was very good but loaded with sodium so I got online and began researching recipes to make my own. I found this recipe from Stupid Easy Paleo. It is very good and not as sweet as the prepackaged apple breakfast sausage. I made a double batch so I would have extra this week for breakfast. I also cooked them on my grill instead of in a pan. Since I was making a double batch this was easier for me. They turned out great! I think next time I may try ground turkey or chicken for something a little different. Continue reading

I saw these coconut wraps from Julian Bakery on Instagram and decided to order them online from their website. I immediately began trying to come up with recipe ideas and decided on these Caribbean inspired shrimp tacos. I cooked the shrimp in a little coconut oil and added them to the wrap along with a quick and easy pineapple and mango slaw. I bought frozen shrimp from Whole Foods because I haven’t had luck finding good fresh shrimp near me. The pineapple mango slaw is even better the next day so it makes a great lunch. I have a serious love for brussel sprouts and kale. I love roasted brussel sprouts and brussel sprouts salads and I eat baby kale almost every day. A friend recently send me a recipe from Bon Appetit for a kale and brussel sprout salad. I used it as inspiration to create a similar salad.
This egg salad is so simple and easy and makes an excellent breakfast or lunch. The recipe can easily be doubled or tripled. Make sure to read the bacon labels to find one without any added nitrates or sugar.

I recently purchased a Spiralizer and I am in love with it. I came up with this recipe as an alternative to pasta salad for summer barbecues. It is a nice and healthy side dish that travles well.
