I am sure that many of you have heard  from other people that they don’t have the dedication you do or they are not willing to sacrifice like you do.  I personally hear this all this time when it comes to my training, paleo lifestyle and over dedication to a healthy lifestyle.  My sons’ swim coach sent this last week and it was just too good to not share.  I have copied and pasted her entire email.   I hope you enjoy it and it keeps you motivated to keep living a healthy lifestyle!!!

I created this recipe last night for dinner.  Before I started eating paleo, I would have served this Caribbean inspired fish with coconut rice so last night I decided to try to substitute with cauliflower rice.  It turned out really well.  Everyone, including my kids, devoured it.  I served this dish with roasted asparagus and mixed green salad similar this.
